This an easy and yet very delicious soup.
1 whole chicken cut up into pieces or kept as whole washed very well
3-4 medium pieces of ginger
3-4 star anise
1 Tbsp coriander seeds
1 tsp black peppercorns
1 black cardamom or 3-4 green cardamom
1 -2 large cinnamon sticks
1 large onion cut into half
1-2 chicken bouillon cubes (optional)
3 Tbsp sugar
1 Tbsp salt or less if you add chicken bouillon
Rice noodle. Wide or thin
• Small yellow onion, sliced thin
• 3-4 scallions, cut into thin rings
• 1/2-1 cup chopped cilantro
• 1 pound bean sprouts
• Basil and or mint
• 1 Serrano chili or and jalapeño cut into thin rings
• 1-2 lime, cut into thin wedges
• Thinly sliced radishes
• Freshly ground black pepper
1-In medium pan and over medium heat brown onion, ginger, cinnamon stick and star anise until they get some brown spots. Also pan fry the rest of the spices if you like. Add coriander seeds and black peppercorns in cheesecloth or
2-Put whole chicken or chicken pieces in a large pot and over high heat and add tap water to cover the chicken.
3-When the water comes to boil lower the heat and Skim any foam that rises to the surface.
4-Add all the species, salt , ginger and the onion halves.
5-Cook for 1 – 1.15 hour depend on the chicken size.
6-Take the chicken out after it cooked and remove the bones, skin and cut into small pieces then covered. You may put back the bones to the broth to give it deep flavor.
7-Add sugar and keep the broth simmering on low heat.
8-Prepare the rice noodle according to package directions. Once it is done transfer to a colander and drain well. Rinse well under cold running water. Drain thoroughly before using.
9-Place a handful of noodles in each bowl then top it with pieces of chicken and Garnishes of your choice then ladle with hot chicken broth.
10- OR Serve the soup with the fresh cilantro, basil, mint, bean sprouts, lime wedges, radishes and jalapeno or red peppers in a plate on the table to garnish as desired.
