Welcome to Episode one of Vegan Vednesday!! We are starting a series all about Vegan food on Vednesday’s! This recipe is scrumptious with a touch of humor and we hope you enjoy.

This is the best chili to make for dinner and to also have in your fridge for left over snacks and meals. Plus it is a great recipe to add your own flavor into it if you want to add another veggie or vegan meat substitute! I hope you really enjoy it as much as we do!

The recipe is:

1 TBPS Olive Oil
1 Medium Yellow Onion (Diced)
1 Cup Peas
1 Cup Corn
1+ Cup of chopped Carrots
1/2 cup Bulgar (Or Quinoa)
2 TBSP Chili Powder
1 TBSP ground Cumin
1-2 Diced Large Tomatoes
1 15oz Can Tomato sauce
1 32oz can of Crushed tomatoes
1 or 2 15oz cans of Black beans
1 or 2 15oz cans of Kidney Beans
1 or 2 15oz cans of Pinto Beans
1.5 Teaspoon salt
Pinch of Pepper
+ whatever other veggies/food you want (red pepper, mushroom, vegan meats…)
